Char kway teow is one of my favorite dishes in Singapore. My go-to place when I lived there was at Ghim Moh Market, but since I was staying with my friend in Tanjong Rhu, I decided to go check out Hill Street in Bedok. After I left Singapore, I was so disappointed to discover that real char kway teow is nowhere to be found in New York City. Places like Nyonya and Jaya serve it, but it’s not at all like the real stuff. The lard is what makes this dish so good (and unhealthy!). This char kway teow definitely hit the spot for me and just thinking about it makes my mouth water. It was great to see that some things in Singapore really hadn’t changed- char kway teow at hawker centers are still available for $3, $4, and they’re still served with these cheap melamine plastic plates and chopsticks 🙂
